I think its so important to have something to look forward to when you get home. Be it left overs, your significant other, taking your dog for a walk, or all three simultaneously; I look forward to what I’m having for dinner. These salmon patties are great over rice or eggs and even fair well alone during your evening stroll.
I really enjoy making theses quick and easy patties for guests or just when I want something that will be even tastier the next day as leftovers. I mix a mayo & siracha mixture to top them off and add some broccoli on the side for the kiddos.
Salmon Patties Recipe (Makes 8 Patties)
Ingredients:
- 1 can (14 oz) of salmon
- 4 eggs
- 3/4 cup bread crumbs
- Juice of half a lemon
- 1 medium shallot, minced
- Tony’s seasoning, to taste
- Canola oil, for frying
Instructions:
- Drain the canned salmon. Place the salmon in a mixing bowl.
- Add 4 eggs, 3/4 cup of breadcrumbs, juice of half a lemon, and minced shallot to the bowl with the salmon. Mix everything together until well combined. It should stick together in a ball.
- Add Tony’s seasoning to taste and mix again.
- Heat some canola oil in a skillet over medium heat.
- Form the salmon mixture into small patties or balls, about 2-3 inches in diameter.
- Place the patties in the skillet and cook for 4 minutes on each side, or until browned and cooked through.
- Serve the salmon patties hot over a bed of rice or your preferred side dish.
