Ingredients:

  • 3 large sweet potatoes, cubed into 1-inch pieces
  • 1/4 cup olive oil
  • 1/4 cup canola oil
  • Salt, to taste
  • Honey, to coat
  • Feta cheese in brine (about 1 cup)
  • 1 tablespoon jalapeño juice
  • Crushed pistachios, for garnish
  • Craisins (dried cranberries), for garnish
  • Watercrest, for garnish

Instructions:

  1. Prepare the Sweet Potatoes:
    • Preheat the oven to the broil setting on high.
    • Toss the sweet potato cubes with the olive oil, canola oil, and salt.
    • Drizzle honey over the oiled potatoes and toss again to coat evenly.
    • Spread the sweet potato cubes in a single layer in a glass baking dish.
  1. Broil and Bake:
    • Place the dish in the oven and broil for about 15 minutes.
    • After 10 minutes, rotate the pan for even cooking.
    • After broiling, reduce the oven temperature to 350°F (175°C) and bake for an additional 7 minutes, or until the sweet potatoes are tender and caramelized.
  1. Make the Whipped Feta:
    • In a bowl, combine the feta cheese (drained from brine) with 1 tablespoon of jalapeño juice. Blend until smooth and creamy.
