Ingredients:
- 3 large sweet potatoes, cubed into 1-inch pieces
- 1/4 cup olive oil
- 1/4 cup canola oil
- Salt, to taste
- Honey, to coat
- Feta cheese in brine (about 1 cup)
- 1 tablespoon jalapeño juice
- Crushed pistachios, for garnish
- Craisins (dried cranberries), for garnish
- Watercrest, for garnish
Instructions:
- Prepare the Sweet Potatoes:
- Preheat the oven to the broil setting on high.
- Toss the sweet potato cubes with the olive oil, canola oil, and salt.
- Drizzle honey over the oiled potatoes and toss again to coat evenly.
- Spread the sweet potato cubes in a single layer in a glass baking dish.
- Broil and Bake:
- Place the dish in the oven and broil for about 15 minutes.
- After 10 minutes, rotate the pan for even cooking.
- After broiling, reduce the oven temperature to 350°F (175°C) and bake for an additional 7 minutes, or until the sweet potatoes are tender and caramelized.
- Make the Whipped Feta:
- In a bowl, combine the feta cheese (drained from brine) with 1 tablespoon of jalapeño juice. Blend until smooth and creamy.
